Slow Cooker Lentil Ham Soup Recipe
1 ¾ cup dried lentils, rinsed
1 lb cooked smoked lean ham, cut into chunks
8 oz chopped onion
6 oz sliced carrots
6 oz chopped celery
1 - 14.5 oz cans low sodium diced tomatoes
5 cloves garlic, minced
7 cups water
½ tsp pepper
½ tsp salt (optional)
½ tsp thyme (or more to your taste preference)
1 bay leaf
Mix all ingredients in slow cooker. Cover and cook for 6-8 hours, or until lentils and vegetables are soft to your liking. Remove bay leaf before serving.
