Oven "Fried" Chicken On Wild Rice with Hommade Tomato "Sauce" Recipe
4 Egg Whites, beaten
2 lbs of Boneless Chicken Breast, Large Pieces
Choice of Herbs (Basil, Oregano, PArsely, Sage is what i used)
Olive Oil
Salt to taste
Pepper
2 Cloves Garlic
Garlic Powder
Red Chili Powder
Whole Wheat Flour
4 tomatoes, chopped fine
Wild Rice
Oats(Steel Cut preferably)
Beat the eggs well, add 2 teaspoons of chili powder while beating.
Dip the chicken breasts in the eggwhites and coat well.
Mix all the dry ingredients (Herbs, Flour, Salt, Pepper, Garlic Powder) and dip the chicken on both sides in it. Double Dip if preferred. Spray both sides of chicken with nonstick spray.
Preheet Oven to 300°C
Cook chicken in oven for 20 minuits or until crisp and the insides arnt pink anymore.
Warm up some wild rice, and simultaneously make the homemade sauce.
Cut up 4 tomatoes into small chunks (julienne)
Saute 2 cloves of fineley chopped garlic in 1 teaspoon of olive oil until brown
Add tomatos and water for desired consistency. Cooked for 2 minuits.
Add herbs of choice, and cook for another 2 min.
Place the rice in a plate (make a "bed")
Place the chicken breasts on top.
Pour the homemade sauce on top.
