Garlic Chicken and Broccoli Recipe
1/2 tbsp olive oil
2 medium/large garlic cloves
150g skinless chicken breast (use free-range if you can)
1 cup of mushrooms
1 cup of broccoli florets
1. Sautee the garlic cloves in the olive oil until fragrant (takes only a minute or so), while this is happening dice the chicken breast and slice the mushrooms.
2. Add the chicken breast cubes and leave to cook for 5 minutes, then add the sliced mushrooms.
3. Leave for another 3 minutes then add the broccoli. The broccoli won't be fried, because the mushrooms will release water while they're being cooked, and this water will steam the broccoli.
4. It's done when the broccoli has turned a darker colour.
