High Protein Scramble Recipe
Two or three 3cm (thick) slices of original spam, cubed
1 quarter large white onion, chopped
1/2 medium brown potato, hot and diced *optional* (you might want to remove this if you are really limiting the carbs)
1/3 cup cooked white chicken breast, shredded (you might want to add more/less depending on your appetite)
1 slice colbyjack cheese, diced.
3 eggs
1 teaspoon olive oil (or just enough to lube the pan to keep eggs from sticking)
1 tablespoon water
Start by simply 'sweating' the onions and spam. This means to cook them on a low heat until their moisture surfaces, but no browning takes place yet. Then, turn up the heat to medium and cook until most of the spam is lightly browned, but the onions are only barely golden. It is important to do this before adding the eggs, since the eggs would be cooked before te other ingredients.
Next, add the chicken and potatoes if you wish. You add the chicken separately to keep it from drying out. Same goes for the cooked potatoes. Then, cook until the spam gets just a bit darker, and the chicken and potatoes (if you added them) begin to sweat and very lightly brown. Don't let the onions get very brown or else they'll dry out.
*mix eggs and water in a glass with a fork. The water keeps the eggs fluffy easier and doesn't allow as much crusting.*
Next, turn down the heat to low, and add the eggs. Do this to keep the eggs from gardening too quickly. Then, using a spatula, mix the ingredients frequently, scraping the edges toward the center every now and then. When the eggs are nearly done but still look slightly 'wet', top with cheese until it finishes cooking. Serve when cheese is almost totally melted.
