Ultimate Omelette Recipe








12-14 egg whites
1/2 Bell Pepper (I like red, but go crazy and mix!)
1/2 Yellow Onion
1/2-3/4 cup Mushrooms
1/4 lb Deli Fat Free Turkey Breast(Or chicken)
Shredded Chedder Cheese (Optional)

Put all egg whites in bowl and add salt & pepper and a dash of milk. Beat with a fork and get all mixed up and fluffy. Chop Bell Pepper and Onion into small dices, if you make them too big, the omelett won't fold nicely. Slice the mushrooms thin too. Then in a seperate small pan, spay Pam, and sautee Bell Pepper and Onion and Mushrooms untill tender. Usually I start the bell peppers first cause they take longer. Do it over low heat so the mushrooms don't burn. This is up to you to make them as tender as you like. I like mine pretty tender.
Then in a 12" pan, spray some pam and place over medium-low heat. Pour in egg white mixture and let cook. When you see the edges start to release off of the pan and most of the egg whites have settled, you're ready to pour in the vegetable mixture. Spread it over half of the omelette. Then top with your Deli meat (I chop it) and finally sprinkle it with some fat free cheddar cheese. Then flip the half that does not have any toppings on it over and cook untill cheese has melted and everything is nice and warmed through. Cut in half and enjoy!
