Taco Salad Recipe








Baby Spinach (or any healthy lettuce)
Brown rice (depending on your carb intake this can vary from 1/4 cup to a 1 cup or no rice at all)
1 bag of Atkins Tortilla Chips (this is a small bag)
Ground Turkey Seasoned Taco Meat
Low-Fat Cheese
Salad Dressing (fat-free preferably - I use "Just 2 Good" Salad dressing, it has two grams of fat and 45 calories)
Salsa
Fat Free sour Cream

Start with the lettuce, add the chips (you should crunch them in the bag first), taco meat, dressing, salsa, then sour cream. You can add guacamole if you like.
