Barley Apple Pudding Recipe








1 cup stewed apples
2 cups Pearled Barley
1/4 cup honey
1 cup raisins
1/2 tsp grated nutmeg
1/4 tsp ground cinnamon
2 eggs, or egg substitutes
juice of 1 lemon

Preheat oven 350. Stir apples, barley, lemon juice, raisins, and honey togetherin large bowl. Add spices. Seperate eggs, beat yolks until creamy; stir into mixture. Beat whites until stiff; fold in. Turn pudding into buttered 1 quart baking dish. Bake at 350 for 35 to 40 minutes.
